What is a cow-calf operation?

A cow-calf operation maintains a herd of breeding cows that produce calves annually, sold at weaning (~7-9 months) for finishing on grass or grain elsewhere. Most small beef farms are cow-calf. The breeding cow herd is the productive asset; calves are the annual income.
